Sometimes you just need the easiest cupcake recipe you can possible find for instant baking gratification.
Sure, you’re not going to win Great British Bake Off with these.
But they sure do go down well with a nice large cup of tea. And really, that’s all that matters.
One my little sisters has come to stay for a few days (it visitor central at our new house at the moment!) so it seemed like an opportune moment to play with some of the goodies I was sent from the Cake Decorating Store.
After a short lived debate on what to bake we settled on a basic chocolate cupcake to go with the vanilla frosting to be garnished with the stash of Oreos I happened to have waiting in the cupboard.
We are big fans of cupcake cases (well, probably muffin cases actually), they are such a pretty colour and actually work rather well with the vanilla and chocolate colours of the Oreo cupcakes.
We also enjoyed these fun vintage-style cake picks with ‘pick me’, ‘delish’ and ‘yum’ written on them. They make for a cute spread don’t they?
My little sister loves using the Oreo biscuit to scoop out and eat some of the frosting first before digging into the cupcake. The boyf on the other hand was all about spooning it out with a teaspoon and chasing with a hot cup of tea!

Preheat the oven to 170C(fan) whilst you prepare the cupcake batter.
Sieve together the flour, cocoa and baking powder into a large bowl. Add the sugar, salt and butter. Now beat together using either a wooden spoon or pop into an electric mixer on a slow speed until combined.
In a separate bowl or jug whisk the milk, egg and vanilla extract.
Slowly pour the liquid mixture over the rest of the ingredients, stirring with a whisk. Beat until the mixture is fully combined and relatively smooth.
Spoon the mixture into cupcake or muffin cases placed in a cupcake tray. Only fill the cases until about half full.
Bake in the oven for 20 minutes or until a skewer inserted into the centre of one cake comes out clean.
Allow the cupcakes to cool completely before adding any icing or frosting.
Now, using a piping bag, add a swirl of frosting to each cupcake starting from the outside and working in. Sprinkle with a few edible embellishments of your choice and finish with half an Oreo placed on top of the icing.
