Bacon is the best, it makes everything better. Bacon is probably one of my most favourite things in the world. Any excuse to use bacon, I say!
The other day I spotted a bag of sweet potatoes that were longing to be used, and so I conjured up these sweet potato cakes to be accompanied by a few rashers of bacon. This dish was so delicious that I thought it would be rude not to share. So if you fancy it, here is how I made it.
Sweet Potato Cakes
3 Sweet Potatoes
3-5 tbsp Plain Flour
Bacon (as much as you can eat!)
Peel and chop sweet potatoes and potato. Boil until soft. Drain, mash, and set aside.
Peel and finely dice onion. Slowly fry until soft.
Allow potatoes and onion to cool
Stir in onion, the whisked egg and 1 tbsp flour.
Evenly spread remaining flour onto a plate.
Form small patties with potato mixture, coat in flour and set aside on greaseproof paper.
Place patties in fridge for at least half an hour.
Heat a dash of oil in large heavy-bottom pan. When hot place patties carefully in pan.
Cook for at least 5 minutes on each side or until the patties are a golden brown colour.
