Recipe: Coconut Prawns

I love coconut and I love prawns so why not just mix the two together and be done with it already! I actually had a dish similar to this at the Thai restaurant we went to last week for our anniversary. That one was more of a batter style coconut coating with a honey drizzle over the top. My recipe here is a breadcrumb coating and is accompanied with a lemon mayonnaise dip. I know lemon is a pretty key ingredient to mayo already but just a squeeze more lemon juice and it really comes alive with the coconut prawns.

This recipe is all about the preparation. You simply need to prepare a few dishes and go through the dipping motions to get a fantastic coconut breadcrumb coating on the prawns.

I think these coconut prawns would be ace with proper big hefty king prawns but we made do with the so-called king prawns from Sainsbury’s which were significantly smaller.

This dish totally calls out for some al fresco eating with an ice cold beer or mojito.

Coconut Prawns (serves 2)

  • 100g king prawns
  • 4 tbsp sweetened coconut
  • 4tbsp breadcrumbs
  • large pinch sea salt
  • 1 large egg
  • 3 tbsp of plain flour
  • sunflower oil for cooking

for the lemon mayo

  • 3-4 tbsp mayonnaise
  • juice of 1/4 – 1/2 lemon (depending on taste)
  1. first prepare the lemon mayonnaise – simply take a fork and whisk the lemon juice into the mayo until smooth and creamy. transfer into a ramekin, cover with cling film and place in the fridge until ready to eat.
  2. to prepare the prawns – place the plain flour on a large plate, whisk the egg in a small shallow bowl, and in another bowl combine the breadcrumbs and coconut with a good pinch of salt
  3. sprinkle the prawns with a light dusting of salt first before dipping in the flour, then the egg and then the coconut breadcrumbs. set aside on a plate or tray until all prawns are coated
  4. heat the oil to a high temperature. using a pair of tongs carefully place the prawns into the oil. it’s best to do this in two batches. cook for 1-2 minutes on each side. keep checking the bottom to see if they are done. when they are golden and cripsy looking remove from pan and rest on a piece of kitchen paper.
  5. enjoy the coconut prawns with lemon mayo or your favourite dipping sauce
