Thai Green Curry Fried Rice

It’s time for another 10 minute dinner recipe idea! This is the perfect recipe for using up leftovers from the fridge or just grabbing some ingredients from the cupboard. It’s super rich in flavour, takes no more than 10 minutes to prep and cook, and is insanely satisfying. It’s my Thai Green Curry Fried Rice.

Now, this dish is on so many menus at street food restaurants in Thailand. When we lived there last year we would often grab a plate of this when we wanted something quick, filling and easy to eat. It’s less fussy than a full blown Thai green curry and is easy to pick up as a takeaway on the go.

The best thing is, it’s so simple to recreate at home and it tastes exactly like the ones we ate in Thailand. Hoorah!

Thai Green Curry Fried Rice with Blue Dragon

For this Thai green curry fried rice recipe I usually have an emergency packet (or three) of ready-cooked rice. Yes, I know it’s easy enough to make my own in 12 minutes, but I quite like the consistency of the bagged ready-cooked rice for this recipe. The rice grains are separated and hold their texture better when fried.

Also, it drastically reduces the cooking time. Much needed when you need emergency tasty food NOW!

My second essential store cupboard essential for this is a Thai Green Curry set. It’s a set of 3 packets of ingredients all ready to make a Thai Green Curry. It includes a large packet of coconut milk, a packet of green curry paste, and a packet of dried spice ingredients. It’s designed to make a full blown Thai green curry, just add chicken and vegetables. But I like to use half the pack and make this drier version of the curry, fried up with rice.

For this recipe I added some fine green beans which I chopped up into bitesize pieces. But you can pop in whatever vegetables you have sitting in your fridge. Get creative and add peppers, aubergines, onion, carrots, bamboo shoots, or anything you fancy. Even switch up the meat to prawns or just stick with a veggie version.

This Thai green curry fried rice recipe is so easy to adapt and still tastes great with minimal effort.

Thai Green Curry Fried Rice Recipe

Thai Green Curry Fried Rice (serves 2)

  • 200g Cooked Chicken, roughly torn
  • 1 tbsp Thai Green Curry paste
  • 250g Cooked Rice
  • Handful of Fine Green Beans, chopped into bitesize pieces
  • 2 tbsp Water
  • 100ml Coconut Milk
  • Sprinkle dried red chilli, dried sweet basil, dried kaffir lime leaves (optional)
  • Pinch of Fresh Coriander
  1. In a large frying pan or wok fry the cooked chicken until cooked through before add the Thai green curry paste. Stir well to combine.
  2. Push the chicken to the edge of the pan and add the cooked rice and green beans along with a few tablespoons of water. Stir until heated through.
  3. Add the coconut milk and dried ingredients, stir well until the entire mixture is hot and the coconut milk has reduced completely into the rice.
  4. Serve immediately with a pinch of roughly torn fresh coriander.
