Ultimate Bacon Pasta

It is crazy that I have not yet shared my recipe for ultimate bacon pasta on Rosalilium considering I make this for my dinner at least once a week. It is my ultimate comfort food and is a super quick and easy dinner to make on those days when you just can’t be bothered to cook. Bacon pasta is also a pretty cheap meal to make and in poorer times this makes for a thrifty meal.

In all honesty I don’t really measure any of the ingredients and often I will throw different bits in. Sometimes there is onion, other times not. Sometimes I’ll add a squeeze of lemon, and other times I’ll chuck in a bit of sausage for extra porky goodness. Fresh basil ripped up on top of the pasta for serving is also a realy treat. This recipe is the basics though.

Bacon Pasta (serves 2-4)

  • 2 rashers bacon per person, chopped
  • dash of olive oil
  • 1 onion, finely sliced
  • 1 large tsp minced garlic
  • 1 tbsp soy sauce
  • 1 tsp chilli flakes
  • 1 tin of chopped tomatoes, whizzed
  • enough pasta for each person, cooked
  1. on a medium-low heat gently fry onions in a large frying pan until soft. make sure they don’t brown too much.
  2. move the bacon to side of frying pan and add the bacon get it moving so it doesn’t stick and allow to cook until turning brown. stir in with the onions and cook for another 3 minutes.
  3. add the garlic, stir for 1 minute and then add the soy sauce and chilli flakes. stir well. season well with salt and pepper.
  4. pour in the whizzed up tomatoes and reduce the heat to a simmer.
  5. meanwhile, cook the pasta to your liking. drain and add to the sauce. toss the whole mixture together with the pasta until well coated.
  6. serve with a small sprinkle of coarse sea salt.
